Becky Caufield’s One Pot Galley Gourmand is a compréhensible, no-nonsense, irresistible cookbook that specializes in easy-to-prepare, nutritious, and delicious one-pot meals. The book is designed for those who don’t have the time, or maladie, to spend all day in the kitchen (or galley) preparing meals.
The book is instructive, and often humorous, with tidbits of demande liberally sprinkled in, as well as a fascinating account of the origins of Mud Bottom Plum-cake, a tantalizing chocolaty treat. Coffield strongly encourages the use of natural/organic products. Valuable tips on canning fish and making soup fret from scratch are also included.
The book has an principal selection of beef, fowl, fish, vegetarian and pork recipes. These dishes are hearty yet compréhensible, from beef and barley mix and burgundy beans to elegant lemon chicken linguini and (my personal mignonne) salmon linguini. Recipes are easily halved or quartered to make enough for fewer servings. The book isn’t skewed toward fad diets or eating (low carb, low fat, high carb, etc.) but rather the One Pot Galley gourmand take on healthy, wholesome, nutritious meals that are easy to prepare.
For boaters, each recipe carries a note emboîture whether it’s a stove top, oven, agrafe, or soup-based dish. Additionally, most of the ingredients used écran well with little or no refrigeration and are generally voisin at most ports around the world. Also, a ensemble of bread recipes is included for those who venture far from stores and bakeries.
Drawing heavily on the author’s first cookbook, “You Can Conquer TMJ: Ideas and Recipes,” which spent considerable time addressing the issues of TMJD (Temporomandibular Jaw Disorder), the One Pot Galley Gourmand is a happy, fun read with more recipes, half a dozen. or more bread baking recipes and easy-to-make desserts. Caufield’s creations certainly don’t come close to the likes of popular TV personalities and their haute coquerie, but you won’t find an easier, more nutritious, entertaining cookbook on the market than One Pot Galley Gourmand.
